If a team member leaves, have it to where you can switch all of their tasks automatically to another team member instead of individually changing them

I totally get this - offboarding someone and having to update all their tasks is tedious. There's actually a way to do this in bulk right now that might help: if you filter for all tasks assigned to them, you can select all and use bulk edit to reassign everything at once.
Not as automated as you're describing, but it should save you from doing them individually. If you're looking for something more built-in for offboarding specifically, I can note that as a workspace management improvement.
