I think the email task feature should show the "To" field. If we can't show that, then show it when "Download original" or "View as email" is selected. Downloading the original email only shows the original body of the email.

Also, it would be cool to be able to reply to the email chain from here, instead of continuously keeping the long email link in the CC'ed line for everyone to see. I understand you can start an email chain from the task and not have the long email link, but what if you are included in an email conversation long after it started? Yep, "Send email to task" road.
