When working with automations and Custom fields, you can select to fill "Text Custom Fields" with data you allready have.

Doesn´t work with other custom fields, like phone Number, etc.

So you can first add the phone to the phone, and email to email, field just to can take over this info to the Tigard tasks, subtasks, emails, via automations 
And after the work to can add also text fields to emails, websites, and phone numbers,
And abut the dropdowns,
you can make it just like the date field's

I think its important to keep data consistent.
So prefilling Email field with Email Data, Phone field with Phone Data, etc. would be really helpfull.
Actually its what we would need right now.
So we do have the customer Data in the task, when it goes to the state "needs more info" that an automation creates a new task for the support team with the phone-number of the first task.

I was happy when I saw the status complete.

But still I cant prefill the custom field of the type mail or website:

Hi Dmitri Limonov,

I have checked with Automated Action of "Create a Task" and the custom field such as Email, phone no. are unable to choose fill from existing data of the task. Look at the screenshot, only "Text" field are able to add existing data from a task. Additionally i think this should be standard for automation such as "Move to list" or "Add to list".
