Hey, Layne Heiny! In our latest release, we have added the ability to use background colors in tables and merge cells! I'm going to mark this request as Complete, but feel free to start a new feature request for the ability to remove borders. Being able to colour in a particular cell in the table is a feature that would be nice to have on ClickUp.
Apart from colouring in cells. ClickUp restricts how small you can make calls. It would be nice to have the option of making a cell smaller or a function that allows you to resize a table so it can fit within the doc page.

If values in a custom field have a color, like a label or dropdown field, those colors appear when the custom field is in a table view. But you can't apply a color scheme based on non-custom field values that appear in a table , so if I want to color code rows based on assignee or overdue due dates, I can't. It would be so helpful to be able to see non-custom field values stand out in tables based on color-coding.

I would like to do this, specifically for the date field (i.e. due today could be a different colour than if things are due in 5 days)
