Add checklist CRUD tools to ClickUp MCP Server

The official ClickUp MCP Server doesn't expose any tools for managing checklists and checklist items within tasks.
Adding these tools would be really helpful:
- create_checklist / edit_checklist / delete_checklist
- create_checklist_item / edit_checklist_item / delete_checklist_item
Use case: AI agents like Claude can create tasks and comments via MCP, but cannot manage checklists. This blocks automated task breakdown from meeting notes, AI-generated QA checklists, and resolving items via chat commands.

+1 from an agency workspace. We run ClickUp through Claude over MCP; it can read checklists via get_task but can't create, edit or tick them, so it falls back to clicking through the web app or a separate API script with a personal token. The v2 API already has Create Checklist, Create/Edit Checklist Item (resolved, assignee, parent) and Delete endpoints, so matching them in MCP (dedicated tools or execute_operator models) would close the gap.
